Procedure:
- Heat oil in a large skillet over medium high.
- Season salmon fillets with salt and pepper. Cook for 5 minutes each side. Set aside.
- Using the same skillet, add butter, garlic, white wine and tomatoes. Cook for 2 minutes.
- Add all purpose cream and simmer while stirring occasionally. Add parmesan cheese, spinach leaves, salt and pepper. Allow the sauce to simmer for 3 minutes.
- Sprinkle parsley and spoon the sauce over each fillet.
