Ingredients:
- 1 tablespoon minced rosemary
Procedure:
- In a large bowl, combine oil, garlic, lemon juice, minced rosemary, chili flakes, salt and pepper.
- Add shrimp and toss to coat shrimp evenly.
- Place mixture in the refrigerator and marinate for 30 minutes.
- Thread the shrimp, pineapple chunks and fresh mint. Add stripped rosemary springs at the top of the skewer for garnish and flavor.
- Grill skewers for 3 minutes each side.
- Best served with fresh sliced cucumber.
