Ingredients:
- 1 whole chicken (cut into pieces)
Procedure:
- Preheat the oven to 180°C.
- In a roasting pan, spread baby potatoes, sliced pumpkin, red onion, pepper and tomatoes. Lay chopped chicken on top of the vegetables.
- Mix olive oil and green pesto and spoon evenly over the chicken. Cover with foil and cook for 30 minutes.
- Remove foil from the pan and cook for another 10 minutes.
