Ingredients
  • 1 cup graham cracker crumbs
  • 1/2 cup cashews
  • 2 tablespoon sugar
  • 1/4 cup melted butter
  • 3 packs cream cheese
  • 1 ½ cup grated queso de bola
  • 3 eggs
  • 1 cup raspberries
  • 1 cup blueberries
Procedure
  1. Preheat the oven to 350°F.
  1. Using a mixing bowl, mix graham cracker crumbs, cashews, sugar, salt and melted butter.
  1. Pour the mixture in a baking pan. Chill until ready to fill.
  1. Using a stand mixer, blend cream cheese, sugar, grated queso de bola and beat in eggs. Pour in the baking pan. Spread evenly.
  1. Bake cheesecake for 40 minutes.
  1. Refrigerate for 4 hours until firm.
  1. Transfer cheesecake in your desired cake stand. Add some mixed berries.
