Procedure
- Preheat the oven to 375ºF.
- Roll out pie dough in a 9 inch pie plate. Place dough in the refrigerator for 20 minutes.
- Place a parchment paper over the pie dough. Add beans and bake for 20 minutes. Remove parchment paper and beans. Return into the oven and bake for another 10 minutes. Set aside.
- Slice mushroom, onions, bell peppers and broccoli. Set aside.
- In a large pan, cook bacon for 7 minutes. Set aside.
- Using the same pan, add vegetables and cook for 5 minutes.
- In a large bowl, add eggs, milk, heavy cream, salt and pepper..
- In the pie plate, add cheese, cooked veggies, bacon and half of the egg mixture. Repeat the layer and fill with the egg mixture.
- Return to the oven and bake for 30 minutes. Let cool for 10 minutes before slicing and serving. Garnish with parsley.
